I'll start by listing a good and well known Citizen Science project here known as The Galaxy Zoo at :
http://www.galaxyzoo.org/ . There thousands of images from an existing deep sky survey (SDSS) are made available in a structured environment. The Galaxy Zoo is an independent project outside of the Asterisk, so if you are interested, please go to the above link to participate in -- and discuss -- that project.
