I use peppers in everything, and am relatively immune to the effects of capsaicin on my fingers. But gloves are frequently recommended. I like dried red peppers, too, but fresh jalapeños have such a nice flavor, and just a hint of tartness, that they can really kick sauces up a notch, especially tomato-based sauces.
